Unearthing your first truffle is an experience to remember. There is an anticipation, an excitement and a distinct scent in the crisp wintery air. It is like waking up to your very first Christmas. At the end of your hunt, you will hold, smell and taste the most prized ingredient of the culinary world – the black winter truffle!
If truffle hunting is the one type of hunting that is in your dreams, Piedmont Region in Italy is one of the best and most important regions for truffle production of Alba White Truffle (TUBER MAGNATUM PICO), Summer Black Truffle (TUBER AESTIVUM), Bianchetto truffle (TUBER ALBINUM PICO) and Moscato Truffle (TUBER BRUMALE).
From March to October and November the fragrance of white truffles is everywhere and all over the World truffle is one of the best condiments which can be used in the kitchen. It is advisable to use it fresh. When fully ripe it best displays its qualities. Each variety of truffle has its own particular, typical aroma, which is suitable for specific culinary uses.
Your truffle experience will start in La Morra wood. Here you will meet the “Trifolau” and his dog, who will accompany you during this outdoor activity.
Wearing the rubber boots that you will be given, if you wish, you can enter the woods to begin the search for the prized truffle. At this point the dog will sniff near the roots of the trees to find the point where the truffle hides.
With patience and attention you will wait for the dog to find the truffle. When you least expect it you will see the dog wagging its tail, sniffing eagerly and digging with its paws. At this point it’s up to you to dig with your hands to collect the truffle intact.
Find the first truffle you will continue the search that will last a couple of hours in total, to find the greatest number of truffles possible.
There is no right or wrong season to hunt for truffles, the only difference is in the truffle to look for. In fact every truffle has its seasonality, the famous Alba Truffle “Magnatum Pico” can be found only from September to December, the white truffle called “Bianchetto” can be found from January to April. Instead during the warmer seasons between May and August it is easier to find black truffles called “Scorzoni”, while the prized black truffle can be found from mid-November to mid-March. In any season, however, the experience of seeing the dog in search of these treasures hidden in the ground will be beautiful, regardless of the truffle found.
Truffle hunting is open to everyone, to those who already know truffles and to those who do not know them. This outdoor activity was born to introduce truffles but above all to make them discover how to look for them, where they are, to understand why they are so expensive and valuable.
